GREECE – Daktyla (Village Bread)

  • Recipe chosen for daktyla
  • Cooking method: Oven

  • Faithfulness to recipe: Yes
  • Met expectations? Yes. The crust was quite fine and the inside was soft and tasty. It was good to make a wholemeal bread given others I baked just before and after were heavier on the sugar and butter.
  • Would cook again? Yes, and probably try different shapes next time or even smaller rolls.
  • The taste test rated on a score of 5: 4

  • 2 tsp dry yeast
  • 1 1/2 cups warm water
  • 2 1/2  cups bread flour
  • 2/3 cups whole wheat flour
  • 1/2 cup fine cornmeal
  • 1 tsp. salt
  • 1 tbs olive oil
  • 1 tbs honey
  • 1 tbs milk (or soy milk), plus extra to glaze
  • sesame seeds to decorate

Again, the method for the recipe I used has all that you need and a few more photos of the process as well.
